Paging All Pizza Lovers

When I tell you that I have been craving pizza for over a month now, I promise you that I am not exaggerating. Apart from the slice of bar-pizza on Bourbon Street last weekend, I cannot tell you the last time I had a good slice of pizza. That kind of slice that makes you sit for a minute and just bask in the glory that is thin, crispy crust; warm, melty cheese; and perfectly cooked toppings that season your pizza better than any blend possibly could. This is the kind of pizza that I finally got to try this weekend!

Varasano's Pizzaria has been around as long as I've lived in Atlanta and I have driven by it at least twice a week for eight years and finally went in to try a pie on Sunday. A few friends were getting together for "Brunch"... at 1:00pm is it still considered brunch? I guess it's Varasano's Brunch Service, where you can spend $15 for bottomless beverages (you can switch between Bellinis, Mimosas, or Bloody Marys). The mimosas and bellinis were tasty, but they were also mostly juice. I watched the bartender make a pitcher using 1 bottle of Andre Sparkling Wine, then fill the pitcher with juice, after pouring a round of drinks (using about two-thirds of the pitcher), he filled the pitcher back up with just juice, no champagne! I would rather get one yummy drink, rather than spend $15 for bottomless juice with a splash of champagne.

Since we went at this awkward time of day, there was a lull in the restaurant, which I think should mean better service since the wait staff isn't rushing around waiting on dozens of customers. This was not our experience. We were a table of 10 people, all willing to drop a lot on appetizers, drinks, and pizzas. Instead, the waitress was slow, it took more than 10 minutes to get drink refills (even on waters), they ran out of menus, and despite saying that some of our members were on a time crunch, the waitress still seemed baffled when they had to rush out at the end.

But Oh. Boy. The pizza is so worth it! Kyle & I ordered this pizza {{above}}, the base is the "Margherita Di Bufala" (thin crust with a light San Marzano tomato sauce, with imported Bufala Mozzarella, and basil). Varasano's recommends keeping your toppings to a minimum because the crust is thin and cannot support a heavy sauce. We opted for peppadews (sweet peppers with just a mild heat), and capicola- which Varasono's claims is their best topping. It did not disappoint!

#1- Trust Your Gut 

Literally. If you think adding a dash of cumin will make your dish taste better, do it! If you think something sounds icky, don't feel like you have to use it. {Ahem, fennel}​

#2- Be Adventurous 

Think of a country that you've always wanted to visit & look up a recipe from that part of the world. Try everything! Even if you think you've had something 20 times before, taste it again, you never know, you might like it better prepared a new way.
