Fudgy Brownie Recipe Review {Pinterest Success}

I'm taking full advantage of still being on a student's schedule 2 days a week by baking whenever I'm at home. This gorgeous weather is making it even more fun!

While searching around on Pinterest, I stumbled upon a recipe by Cafe Delites- a fellow food blogger. Specifically, I decided to try her recipe for the Best Fudgy Cocoa Brownies and they did not disappoint!

The Story

I'm not comfortable sharing her exact recipe here, some part of that feels like copyright infringement, especially because it sounds like Cafe Delites has been through several iterations of brownies to figure out this wonderful recipe. Instead, I have linked her recipe and I will take you through each part and review her recipe and the process.

I really liked reading how much Karina likes these brownies, she made it clear that she had tried several other ones and finally found a lower calorie version (for 1/16 of the batter, 144 calories!). Her photos are gorgeous, but I feel like there's just one sentence in between each large photo, so it was hard to find them notes.

The Ingredients

Karina, the author of this recipe, calls for "caster sugar." However, I was unable to find it at my local grocery store. I was a little irked that Karina didn't explain why she wanted us to use caster sugar. I really appreciate when recipe authors explain the science, or at least a base reason why they are choosing a specific ingredient over a more generic one.

I typically weigh my dry ingredients. I have rarely seen baking recipes which call for volume over weight. However, Karina at Cafe Delite uses volume (you'll see in an upcoming post why I think it should always be by weight). So it's possible that I used a slightly different amount of dry ingredients than Karina meant for us to use.

I've always used unsalted butter for baking, but I know several bakers who exclusively use salted butter, so that's just a personal preference.

I used "jumbo" eggs, and I'm not sure if that would have made a difference.

My Follow Through

What I did wrong:

Mostly, I baked the brownies for too long. They weren't as fudgy as they should have been, and the topping got a bit too coked instead of flaky.

What I did right:

This. This right here is so right. They were delicious! Even though I overcooked them a little bit and the edges were a bit wobbly, they still make my mouth water just looking at them! Guess what. They. Taste. Even. Better.

Overall, I could this as a Pinterest WIN! I also will definitely be checking out Cafe Delites and Karina again for more baking recipes.

#1- Trust Your Gut 

Literally. If you think adding a dash of cumin will make your dish taste better, do it! If you think something sounds icky, don't feel like you have to use it. {Ahem, fennel}​

#2- Be Adventurous 

Think of a country that you've always wanted to visit & look up a recipe from that part of the world. Try everything! Even if you think you've had something 20 times before, taste it again, you never know, you might like it better prepared a new way.
