Asian Chicken Lettuce Wraps
About two years ago, Kyle and I were using the Site www.AllRecipes.com to find most of our dinner ideas. One day, we knew that we wanted something Asian for dinner, so I type into the search box "Asian," which Kyle was certain wouldn't pull up any good responses... Sure enough, we found one of our favorite Undercover Healthy dinners from this happy accident.
By now, you must realize that Kyle is the real chef between the two of us, but, there are a handful of things that I actually do on my own! We use this recipe and honestly, but I tweaked it! To get the full recipe the way that I make it, click here.
My best way to make Asian Lettuce Wraps into a true undercover healthy Delicious Dinner, is substituting ground beef for ground chicken!
Using my KitchenAid and meat grinder attachment, we grind up two pounds of chicken, we eat half for dinner & with the other half,
I have healthy, pre-portioned lunches all prepared for rest of the week!
Here's a few tips:
-Start with frozen chicken & only mostly thaw it, if the chicken is still a little frozen, it'll be easier to push through the grinder. Also, if you cut it into strips or chunks, it'l move through pretty nicely!
-When I grind my own meats, I like to take the opportunity to flavor them right there! So when I ground the chicken for the lettuce wraps, I sprinkle a few chopped scallions and minced ginger, and a few drops of low-sodium soy sauce and Asian chille pepper sauce every few inches of chicken to infuse the flavors throughout the meat. This was the first time that I tried doing it this way, and it turned out great!!
-Before you start to cook, do all your measuring and chopping. This is a meal that goes quickly once you get started, so it really helps to have everything already prepared to add to the pan. I also **love** using my mini spatulas to get all of the sauce, oil, or small ingredients out of a prep bowl.
-When you're cooking the chicken at the beginning, use a little low-sodium soy sauce to de-glaze the pan, it also adds a little Asian flavor!
Serve it with jasmine or medium grain rice, bibb or iceberg lettuce, pickled ginger, soy sauce, scallions, and toasted sesame seeds. Everyone can create-their-own lettuce wraps!
