Simple Sundays

Like I said last week, Sundays are special for us: We try not to make plans for Sunday evenings, we try to put down our phones, we try to prepare for the week ahead... In my case, I started my internship on Monday, so Sunday night was spent mentally preparing for that. Kyle had a late tee-time, so I was in charge of dinner (always a risky move). Since I was getting ready to start my internship and was still reveling in the simplicity of my weekend, I wanted some comfort food, something out of my childhood...
When I was a kid, my dad traveled a lot for work so my mom and I were alone for a lot of weeknight dinners. We started "Lazy Mom Dinners." They were some of my favorite nights! It would be when we were tired, or didn't realize that we were hungry until later; but they all ended the same, watching TV in front of the fireplace, with my mom and our pets, and I got to make dinner. I felt so grown up! Even when I was pretty young, and I got to "make dinner" it was things like apple slices with cereal or cinnamon toast Eggos. As I grew older, and learned how to "cook" without burning the house down, I started heating up leftovers and eventually grew into actually getting to use the stove and the George Foreman Grill!
To this day, Tortellini Soup with Bratwurst and Carrots remains one of my favorite meals because it evokes so many fond memories that I have of spending time with my mom when I lived at home. It's also one of the simplest meals that I can possibly imagine making! All it takes is 3-4 cups of chicken broth (you can use home made like we do--recipe here--or store bought), a bag or box of tortellini, I grew upon Bertoli, but lately have been loving Ravelini, and a sprinkle of Parmesan cheese! Heat up the chicken broth, cook the tortellini as instructed on the packaging, a few turns of a pepper grinder, a teaspoon of Parmesan and you've got my favorite "Lazy Mom Dinner."
To round out the meal, we throw some bratwursts on the George Foreman while the soup is cooking, carve up a rotisserie chicken from the grocery store (make sure to save the carcass to make more chicken stock), and pair it with carrots for a Simple Sunday Delicious Dinner.
