Helluva Hostess: {Extra-Lite Version} Shrimp Scampi

Y'all! I Finally got Kyle to do a recipe write up! You should definitely check out his take and tips on Shrimp Scampi in this blog post. Being two vastly different sizes, and with different caloric goals, we tend to cook meals in 2 separate pans. At under 350 calories, this is one of the most decadent undercover healthy meals that I've ever tasted!

So, for my size, here's how I do it:

Ingredients

  • 1 oz. angel hair pasta: "pot-ready" preferred

  • 4 oz. (about 8) shrimp, shell-on

  • 3-5 cloves garlic

  • 1/3-1/2 lemon (you will use the zest and the juice)

  • 1 tbsp butter

  • spray olive oil

  • 1/3 bunch Italian flat-leaf parsley

  • 1/2 cup dry white wine

Tricks for Making It Seem Bigger:

1. Spray Olive Oil. You can be way more generous with spray olive oil than you can with regular liquid. The aresol coats the entire pan (it especially helps if you use a nonstick pan), plus you can spray over the top of the shrimp before flipping it, which adds a second layer of non-stick.

2. Half-Sized Angel Hair. Seriously. It seems so silly, but the half-size makes it seem like so much more food! I still use the same weight of pasta, but when it's on the plate, it spreads around more and allows you to take smaller bites.

3. Cut Your Shrimp. In the pan, while they're hot, the shrimp cut very easily with the sharp edge of a spatula. When they are cut (I usually do 2-3 pieces), it's a lot easier to get a piece of shrimp in every bite, which will definitely make you feel like you had more than 8 pieces of shrimp.

4. Be Generous With Flavors. I always use a good bit of lemon juice, red pepper flakes, and garlic. I use a higher proportion of flavors to pasta and shrimp than Kyle's recipe calls for, which means that it comes out incredibly decadent.

Use our Shrimp Scampi recipe with these ingredients and your entire, filling, decadent, delicious dinner will total under 350 calories.

#1- Trust Your Gut 

Literally. If you think adding a dash of cumin will make your dish taste better, do it! If you think something sounds icky, don't feel like you have to use it. {Ahem, fennel}​

#2- Be Adventurous 

Think of a country that you've always wanted to visit & look up a recipe from that part of the world. Try everything! Even if you think you've had something 20 times before, taste it again, you never know, you might like it better prepared a new way.
